Tuesday, April 30

Today has been another day off of work where I haven't done a lot of exercise.  I should probably get on that.  But I made some great food today.  That is what happens when I am in a cooking mood.

First, I made these muffin omelet things with broccoli and mushrooms and they were great.  3 points for 2 muffins.  I paired that up with a slice of toast and mixed fruit.  Great meal for 6 points.

Then, I made tomato bisque soup.  I forgot to add the heavy cream so it ended up being 1 point for a cup worth of soup when it should have been three.  Oh well, less points and more veggies for me.  I made a grilled cheese sandwich with ham to go with this meal.  Entire meal was 11 points because I had an extra half sandwich.

I am not too hungry right now, so I don't know what will happen for dinner.  I have plenty of points still.

I also ordered another bountiful basket today.  We thought we would get one every other week.  However, we have almost finished off the produce from this week.  I'm quite amazed.  So we will get another one.  No bread this time since we aren't low on that yet.

Bountiful Basket April 27, 2013

I am loving Bountiful Basket.

Bountiful Basket is a non-profit food co-op.  They use all of the donations to purchase produce and then all you have to do is pick it up from the volunteer site.  If you want to know more about them, go to www.bountifulbaskets.org

This week I got the following. . .
7 Tomatoes
2 Bunches Celery
9 Ears of Corn
6 Bananas
1 Pineapple
2 Bunches Broccoli
1 Bunch Green Onions
2 Mangos
1 Mini-Watermelon
1 Bunch Romaine Lettuce
1 Pound Strawberries
2 Loaves 9 Grain Brean
2 Loaves English Muffin Bread
1 Baguette

So far we have made spaghetti sauce, fruit salad, and cooked the corn and freezed it in baggies.  I am also planning on making banana bread since the hubby and I don't like bananas, but like banana bread.

Pasta Carbonara (7 WW Points)


This is one of my favorite meals and it comes out to about 7 points for a cup worth of pasta.  Add a roll and a side salad and you have a good meal.

Pasta Carbonara


Ingredients
2 ½ Cups Uncooked Mostaccioli
8 Bacon Strips, Diced
1 Jar (4 ½ oz) Whole Mushrooms, Drained
¾ Cup half-and-half Cream
1/3 Cup Butter, Cubed
1 tsp. Dried Parsley Flakes
1 tsp. Minced Garlic
6-8 Drops Hot Pepper Sauce
½ tsp. Salt, Optional
1/3 Cup Grated Parmesan Cheese
¼ Cup Sliced Green Onions
Directions
1. Cook mostaccioli according to package directions.
2. Meanwhile, in a large skillet, cook bacon over medium heat until crisp.  Using a slotted spoon, remove to paper towels to drain.  Brown mushrooms in drippings; remove to paper towels.  Drain drippings from pan.
3. Add the cream, butter, parsley, garlic, pepper sauce and salt if desired to the skillet; cook and stir over medium heat until butter is melted.  Drain mostaccioli; add to cream mixture.  Stir in the bacon, mushrooms and cheese; heat through.  Remove from the heat.  Sprinkle with green onions.


Weight Watchers Start

I have recently started doing Weight Watchers in my journey to try and lose weight and be healthy.  I won't go into a huge amount of detail and just start in life and what I am doing to get there.

Eating, I stayed on point today.

Activity, I did 20 minutes of Just Dance with my hubby.  Earlier in the day, I wanted to watch a TV movie and during the commercials I did 10 sit-ups and 25 jumping jacks.

I loved getting my bountiful basket the other day.  Today I ended up cooking up the 9 ears of corn and then cutting the kernels off and separating them into half pound baggies.  I threw those into the freezer so they are easy to work with.

I also cut up a mini-watermelon, a fresh pineapple, two mangos, and a half pound of strawberries to make a fruit salad.  All of the fruit was amazing.  the hubby already finished one of the two bowls.
